Farmers Market and Butternut Squash Soup

A friend and I went over to Union Square Farmers Market this past weekend and I took a few photos using my phone. I especially like going in the fall to get some warm apple cider and some baked goods before heading over to the Union Square Theatre to catch a movie. Rosemary wreaths smell amazing




Butternut Squash Soup for dinner yesterday using some items that I picked up at the market. It so easy to make.

2-3 tabs of butter
1 large yellow onion chopped
3 small or 1 large butternut squash peeled and cubed
1 1/2 cans of chicken or vegetable stock
dash of nutmeg
salt and pepper to taste

In a large pot add the butter and onion. Cook the onion until it's clear (about 5-10 minutes). Make sure to stir so that they do not burn them. When they are done add the squash and enough stock to just cover the vegetables. Bring it to a boil and then cover. Cook until the squash is soft (about 20-30 minutes). Add the nutmeg, salt and pepper. I like to use a hand blender like this Cuisinart to mash it up until it is a creamy soup texture or you can put into a blender or food processor but be sure to do it in small batches and allow the steam to release.
